Use a thermometer, not a timer. Every figure here is for planning when to put the food in — it cannot tell you when the food is done. Ovens run hot or cold, joints vary in shape, and a piece straight from the fridge behaves differently from one left out. Poultry is safe at 165°F, ground meat at 160°F, and whole cuts of beef, pork and lamb at 145°F with a three-minute rest. Check the thickest part, away from bone, and trust the reading over any calculation including this one.

A per-pound rule would say 2 hr 20 min. That is 24 min more than needed, which mostly costs you a dry dinner rather than a dangerous one. The bigger joint does need longer, just nowhere near proportionally longer.
Where this rule comes from, and how well it holds. Fitting a power curve to the USDA's published turkey roasting chart gives an exponent of 0.649 with an R-squared of 0.994 — almost exactly the two-thirds that the geometry predicts. So this is not a theory imposed on cooking; it is what the official timetable already does, stated as a formula so you can apply it to your own joint.

What this cannot know. It assumes the new piece is the same shape as the old one, which is fair for two joints of the same cut and poor for a long thin piece against a compact one — thickness is what matters, so measure it if you can. It also cannot see whether your oven runs hot, whether the food went in cold, how full the oven is, or whether the joint is bone-in. Start checking at about three-quarters of the figure above, and let the thermometer decide.
THE HEAT
Cooking is a race between the outside and the middle. Heat arrives at the surface immediately and then has to conduct inward, so the centre is always last. Make the piece thicker and that journey lengthens with the square of the distance — which is the whole reason a bigger joint needs longer, and why the outside of a very large one is overdone by the time the middle is safe.
