175°C is the universal cookie and biscuit temperature — almost every chocolate chip cookie recipe in the world uses 350°F (177°C), and 175°C is the practical metric equivalent. At this temperature the Maillard reaction is active enough to create golden colour and caramelised edges while the centre stays moist.
