175°C / 347°F OVEN TEMPERATURE GUIDE

175°C is 347°F, Gas Mark 4, and 155°C fan/convection. This is a Slow-Moderate Oven — and the closest metric equivalent to the US standard 350°F (177°C), with just a 2°C difference. For all practical purposes, 175°C and 350°F are interchangeable — no time adjustment needed. It is the universal cookie and biscuit temperature, and the sweet spot between the British 170°C and 180°C.

✅ 175°C = effectively 350°F (technically 347°F — just 2°C difference). If a US recipe says 350°F, set your oven to 175°C. No time adjustment needed. Fan/convection: 155°C.

WHAT TO COOK AT 175°C (347°F / 350°F)

175°C is the universal cookie and biscuit temperature — almost every chocolate chip cookie recipe in the world uses 350°F (177°C), and 175°C is the practical metric equivalent. At this temperature the Maillard reaction is active enough to create golden colour and caramelised edges while the centre stays moist. It is also the ideal sheet-cake temperature — fast enough for a golden top, gentle enough to avoid doming.

RECIPE TIMING GUIDE AT 175°C

Chocolate chip cookies

10–13 min

Golden edges, soft centre. Cool on tray 5 min before moving.

Sugar cookies / biscuits

10–12 min

Pale gold, firm on edges. They crisp up as they cool.

Sheet cake (33×23cm)

28–35 min

Skewer clean, slight pull from tin edges.

Cupcakes / fairy cakes

16–20 min

Springy top, skewer clean from centre.

Quick bread (courgette/zucchini)

55–65 min

Skewer clean, golden top, sides pulling from tin.

Soft dinner rolls

15–18 min

Pale gold tops. Tap base — hollow sound means done.

Blondies / white chocolate bars

22–28 min

Set edges, slightly wobbly centre. Firm when completely cool.

Fruitcake (small loaf)

70–90 min

Skewer clean. Cover with foil after 40 min if browning too fast.

Slow-roasted cherry tomatoes

60–75 min

Jammy, collapsed, slightly caramelised edges.

Traybake sponge (30×20cm)

22–28 min

Springy to touch, skewer clean, golden top.

Times are approximate. Oven calibration varies — use a thermometer and test for doneness.

175°C ACROSS DIFFERENT OVEN TYPES

175°C

Conventional (fan off)

Standard setting. Slightly cooler than 180°C — useful when recipes say 180°C but your oven runs 5°C hot.

155°C

Fan / Convection

Reduce by 20°C. Very close to 150°C fan — use for recipes requiring even, gentle heat with slight colour.

165°C

Fan-assisted (partial fan)

Reduce by 10°C. Between the two standard fan settings — useful for moderately delicate bakes.

Gas 4

Gas Mark

175°C corresponds to Gas 4 (the same marking as 180°C). The two are almost interchangeable on gas.

Baking oven

AGA / Rayburn

Lower end of the baking oven (170–190°C). Good for cakes and cookies that need even, moderate heat.

IS YOUR OVEN ACCURATE AT 175°C?

Oven runs hot

  • Cookies spread too thin and brown fast
  • Sheet cakes dome and crack
  • Done 8–12 min early
  • Edges burn before centre sets

Fix: Set dial to 158–163°C

Oven runs cool

  • Cookies pale and doughy
  • Sheet cakes take much longer
  • Cupcakes sink in the centre
  • Rolls under-coloured

Fix: Set dial to 188–193°C

Oven accurate

  • Cookies golden at 11–12 min
  • Sheet cake done at 30–33 min
  • Cupcakes springy and golden
  • Rolls hollow when tapped

Fix: Use 175°C as written

Best fix: An oven thermometer (£5–10 / $8–15). Preheat 20 minutes, read the true temperature, note the offset, and apply every bake. Most ovens are 10–30°C off their dial.
