210°C is where bread baking reaches its peak for most home ovens, and where pizza starts to approach restaurant quality. The combination of intense ambient heat and a fully preheated thermal mass (Dutch oven, stone, or steel) creates the conditions for dramatic oven spring, leopard-spotted pizza crusts, and mahogany-coloured sourdough. At this temperature, the difference between 5 minutes over or under is visible on the finished product.

Artisan sourdough loaf

Score deep. Covered Dutch oven first 20 min, uncovered final 12–15 min.
Crispy-skin chicken pieces

Skin deep golden, fat rendered out. Toss in oil and season generously.
Garlic flatbreads / naan

Blister and char in spots. Cast iron or preheated steel tray essential.
Roasted broccoli / cauliflower

Charred floret tips, tender stems. High heat creates nutty, sweet flavour.
Pork belly (crackling blast)

Seared lamb rack (finish)

STEP BY STEP — TWO-PHASE BAKE
Covered — 20 min at 210°C
Dutch oven preheated 45 min. Dough scored and lowered in on parchment. Lid on. Steam from the dough creates a humid environment — oven spring is dramatic in the first 10–15 min. No opening the oven.
Uncovered — 12–15 min at 210°C
Remove lid. Crust dries, colours, and develops. Target: deep mahogany, not pale gold. Internal temperature 95–98°C. The loaf should sound hollow when tapped on the base.
What to expect
A well-baked sourdough loaf at 210°C will have an open, chewy crumb, a thick crackling crust, and an internal structure that holds without being gummy. Cool on a wire rack for at least 1 hour before cutting — the crumb continues setting as it cools.
