200°C is 392°F, Gas Mark 6, and 180°C fan/convection. Classified as a Hot Oven — this is the standard temperature for bread loaves, roast beef, jacket potatoes, whole roast chicken, and ciabatta. The metric equivalent of the US standard 400°F (204°C — just 4°C difference, completely interchangeable). 180°C fan is the single most-used fan-oven setting in everyday cooking.

✅ 200°C = effectively 400°F (technically 392°F — just 4°C difference). If a US recipe says 400°F, set your oven to 200°C. No time adjustment needed.

💡 Fan/convection oven: set to 180°C — the most-used fan setting in everyday cooking. Fan-assisted: 190°C. Cook 15–25% faster than conventional.

WHAT TO COOK AT 200°C (392°F / 400°F)

200°C is where baking crosses into serious roasting territory. The Maillard reaction is fully active, producing deep golden colour and complex flavour rapidly. Bread needs 200°C for oven spring and crust formation. Roasts need it for browning the exterior before the interior over-cooks. Jacket potatoes need it for the crispy skin that lower temperatures cannot achieve.

RECIPE TIMING GUIDE AT 200°C

White bread loaf (900g)

30–35 min

Golden crust, hollow when tapped. Add steam for first 10 min for best crust.

Roast beef (topside, medium)

20 min/kg + 20

Internal 60°C medium-rare, 70°C medium. Rest 20 min tented in foil.

Jacket potatoes

60–75 min

Crispy skin, fluffy inside. Rub with oil and salt. No foil.

Ciabatta / open-crumb loaf

22–28 min

Golden crust, hollow when tapped. High hydration — scrape, do not knead.

Whole roast chicken (1.5kg)

85–95 min

Internal 75°C in thigh. Rest 15 min. Crisp, golden skin.

Garlic bread (baguette)

12–15 min

Foil-wrapped for 8 min, then open for last 5 min — golden crispy edges.

Roasted cauliflower (whole)

45–55 min

Deeply caramelised. Coat well in oil and season. Check at 40 min.

Beef Wellington (individual)

25–30 min

Pastry deep golden, beef internal 52–55°C for medium-rare.

Pork loin (no crackling)

25 min/kg + 25

Internal 70°C. For crackling: blast at 220°C for 20 min first.

Butternut squash (halved)

40–50 min

Cut-side down, caramelised and tender. Brush with butter or oil.

Always use a meat thermometer for proteins. Times are approximate — oven calibration varies.

200°C ACROSS DIFFERENT OVEN TYPES

200°C

Conventional (fan off)

Standard setting. The workhorse hot-oven temperature — bread, roast beef, chicken, jacket potatoes. Most roasting recipes mean this.

180°C

Fan / Convection

Reduce by 20°C. 180°C fan = the most-used fan setting for roasting. Cooks 15–25% faster, more even browning on all sides.

190°C

Fan-assisted (partial fan)

Reduce by 10°C. Good all-round roasting setting — between the two. Very common in modern European built-in ovens.

Gas 6

Gas Mark

Upper end of Gas Mark 6 (195–200°C). Gas 6 is the most-used roasting mark in British cooking — virtually all roasting recipes that say Gas 6 mean 200°C.

Roasting oven (lower-middle)

AGA / Rayburn

Lower-middle shelf of the roasting oven approximates 200°C. Top shelf is hotter (~230°C), bottom shelf cooler (~180°C).

Oven runs hot

  • Bread crust burns before loaf sounds hollow
  • Chicken skin chars before meat cooks
  • Jacket potato skin blackens
  • Roast done 15+ min early

Fix: Set dial to 183–188°C

Oven runs cool

  • Bread pale and soft after 35 min
  • Chicken skin stays soft and pale
  • Jacket potato takes 90+ min
  • Roast takes much longer than expected

Fix: Set dial to 213–218°C

Oven accurate

  • Bread golden at 32 min, hollow tap
  • Chicken golden skin, 75°C internal
  • Jacket crispy at 70 min
  • Roast hits temp on schedule

Fix: Use 200°C as written

Best fix: An oven thermometer (£5–10 / $8–15). Preheat 20 minutes, read the true temperature, note the offset, apply every time. For roasting especially, oven accuracy affects meat safety — use a probe thermometer for all proteins.
